Saturday night I got home around 10:30 from the fair, but was too wired to go to bed. We were having Matt's family over for dinner on Sunday for his dad's 55th birthday, so I started baking his dessert: Carrot cake with cream cheese frosting...yum!!
Carrot Cake (AKA Farmer's Cake)
1 1/2 c oil
2 cup sugar
3 eggs
2 tsp cinnamon
2 tsp baking soda
2 tsp vanilla
1 tsp salt
1 cup chopped nuts
2 cups shredded carrots
1/2 cup crushed pineapple
Combine all ingredients, bake at 350* 1 hour.
Cream Cheese Frosting
2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
DIRECTIONS
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.
I managed to spend all of Sunday afternoon in the kitchen, cleaning and cooking. I missed cooking! You'd think a week on grill would make me not want to cook, but nope! Big smile on my face! For dinner we had steak, salt potatoes, focaccia, salad, and fresh corn: All of it YUM! We had a good time with everyone. Two of Matt's aunts are up visiting so it was a little crazy, after a few drinks.

I also got a bit more done on Matt's quilt, which I'm definitely thinking I will have it done by his birthday (12/8): He's liking it so far. I do have to cut out more fabric. I managed to concoct a flannel wall so that I can play with the block positioning easier.
I'm actually really enjoying doing this pattern. The blocks are actually pretty easy to put together and I'm really liking the colors together: Matt likes the colors. The finished quilt will actually be a full size blanket, big enough for Matt to curl up on the couch with.
All in all it was a good weekend and I actually managed to get a lot of things done that I enjoyed doing!
